Salad: Chicken Mango with Black Beans

The chicken, mango and black beans are an awesome combination but the lime in this dressing brings everything out. Probably one of my favorite protein salads and healthy to boot as there is no oil in the dressing.

Ingredients

  • Dressing:
  • 2 cups (1/2-inch) diced cooked skinless chicken breast
  • 1 large mango, peeled, seeded, and cut into small cubes (about 1 1/2 cups)
  • 2 (4-ounce) Persian or pickling cucumbers, scrubbed and cut into small cubes
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 large cob of corn kernels, cut off cob
  • 1 small green pepper, diced
  • 2/3 cup sliced almonds, toasted
  • Grated zest of 1 large lime
  • 1/2-2/3 cup fresh lime juice (from 3-4 large limes, I tend to like more lime juice in this dressing but you can adjust to your taste)
  • 1/4 cup honey
  • 1 tbs dijon mustard
  • 1 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/8 tsp cayenne pepper
  • 1/4 cup creamy almond butter, optional

Preparation

Step 1

Mix all salad ingredients in large bowl.

Whisk salad dressing ingredients through cayenne pepper and then whisk in almond butter until smooth and thickened. Add to salad.
