Ingredients
- 2 1\4 c flour
- 1 \2 c sugar
- 1 \4 c brown sugar
- 2 tsp. cinnamon
- 1 1\2 tsp. baking powder
- 1 \2 tsp. salt
- 1 \4 tsp. baking soda
- 2 eggs
- 2 \3 c canola oil
- 1 c crushed, drained pineapple
- 1 1\2 c shredded carrots
- 8 oz cream cheese, room temp.
- 1 \3 c sugar
- 1 \2 c chopped walnuts
- 1 1\2 c powdered sugar
- 3 tbsp. milk
Preparation
Step 1
Prehaet oven to 350 degrees
In lg. bowl whisk flour, sugar, brown sugar, cinnamon, baking powder, salt & baking soda
In separate bowl whisk together eggs & oil
Add the egg mixture to the flour allatonce & mix until almost combined
In a separate mix the cream cheese & sugar
Scoop 2 tbsp. batter then 1 tbsp. filling then 2 more tbsp. batter
Bake in preheated oven for 17-19 minutes transfer to a wire rack till completely cool
In a small bowl whisk together powdered sugar & milk, sprinkle muffin tops with pecans then pour glaze over the tops
