Tomato Cucumber and Feta Salad with Balsamic Glaze

This is a simple salad. Instead of buying the glaze, make this 2 ingredient one and store the extra. Drizzle over fish, poultry, vegetables, pastas, salads, ice cream and even fruit. Add to sauces for a more complex flavor.

Ingredients

  • Balsamic Glaze
  • 1 cup balsamic vinegar
  • 6 tablespoons maple syrup, honey or brown sugar
  • Salad
  • 1 large cucumber, peeled and cut into 1/8-inch slices
  • 1 small red onion, cut into thin slices, about 1/4 cup
  • 4 tablespoons feta cheese, crumbled (I use Athenos)
  • 2 cups cherry tomatoes, sliced in halves or thirds
  • Crumbled Bacon 2 slices per salad (optional)

Preparation

Step 1

Mix balsamic vinegar with brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to medium low, and simmer until glaze is reduced by half, about 10 minutes. The glaze should coat the back of a spoon. Let cool before serving. Pour into a jar with a lid or a squeeze bottle. Store in refrigerator.
If the glaze is over reduced and too thick, heat in microwave and add HOT water until it's the right consistency.
Salad
Arrange 1/2 cup cucumbers on each serving plate. Top each plate with 1/2 cup tomatoes and onion to taste. Lightly salt and pepper and add bacon bits, if desired. Drizzle 1 tablespoon of balsamic glaze over each salad.
