Blackberry Parfait Martinis

Ingredients

  • 1/4 cup crushed cashews
  • 2 cups low-fat vanilla yogurt
  • 1 cup crushed graham crackers
  • 1/2 cup diced strawberries or tropical fruit
  • 2 cups blackberries, raspberries or blueberries

Preparation

Step 1

Coat a skillet with cooking spray; add cashews and stir over medium heat for 2 minutes.

Divide yogurt, graham crackers, strawberries and blackberries into thin layers among 4 martini gasses, ending with yogurt. Top with large blackberries and warm cashews.
