Baked Potato Casserole

Ingredients

  • 6 slices precooked bacon
  • 1 (24 oz.) package refrigerated mashed potatoes, or equivalent of freshly mashed potatoes
  • 1 C. (4 oz.) shredded Monterey Jack cheese with peppers
  • 1/2 (8 oz.) package cream cheese, cut into cubes
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 3 C. (12 oz.) shredded sharp Cheddar cheese, divided
  • 1 (8oz.) container sour cream
  • 2 cooked chicken breasts, shredded
  • 1/2 C. barbecue sauce, if desired

Preparation

Step 1

1. Crumble bacon and set aside. Preheat oven to 375 degrees.

2. Stir together mashed potatoes, Monterey Jack cheese, cream cheese, salt and pepper and 2 Cups Cheddar cheese in a large microwave-safe bowl. Microwave, covered, at HIGH 4 minutes. Stir in sour cream.

3. Spoon potato mixture into a lightly greased 7 X 11 inch baking dish. Arrange chicken evenly over potatoes; drizzle with barbecue sauce, if desired. Sprinkle evenly with bacon and remaining 1 Cup Cheddar cheese.

4. Bake 15 minutes or until casserole is thoroughly heated and cheese is melted.
