Bruschetta Chicken Pasta Salad

Ingredients

  • 1 lb. angel hair pasta
  • 1 lb. boneless skinless chicken breast
  • 1 tsp. dried basil
  • 1 tsp. dried oregano
  • 1/2 tsp. garlic powder
  • 1/4 olive oil
  • 2 tbsp. minced garlic
  • 2 tbsp. red onion
  • 2 tbsp. balsamic vinegar
  • 8 Roma tomatoes
  • 1/2 c grated parm. cheese
  • 2 tbsp. Finely chopped fresh basil
  • Balsamic glaze

Preparation

Step 1

Cook pasta , drain and rinse in cold water
While the pasta is boiling season chicken with herbs, garlic powder, salt. Heat 1 tsp. of oil in a skillet and sear chicken over medium high heat until browned on both sides and cooked through about 6 minutes each side, remove from pan and set aside and allow to rest
Add olive oil to same hot pan/ skillet, when hot sauté the garlic and onion until garlic is fragrant about 1 minute, turn off heat
Add tomatoes, toss them lightly in the heat to combine all of the flavors, add tomato and add tomato mixture onto the pasta. Mix in the vinegar, parm. cheese and basil
Slice the chicken add to pasta
Toss the pasta with all of the ingredients until well combined
Top with 2 tbsp. extra parm.
