Slow Cooker Chicken Orzo & Garbanzo Beans

Ingredients

  • 16 0z Garbanzo Beans
  • 15 0z Tomato Sauce
  • 2 Lbs Boneless, Skinless Chicken Breasts, Cut into about 12 pieces
  • 1 Medium Onion, Diced
  • 1/4 Cup Coarsley Chopped Pitted Kalmata Olives
  • 1 Tbsp Chopped Fresh Oregano (or 1 Tsp dried oregano)
  • 1 Clove Minced Garlic
  • 1/4 Tsp Ground Black Pepper
  • 12 oz Dried Orzo Pasta
  • 6 Tbsp Crumbled Feta Cheese

Preparation

Step 1

1. Add the chicken, beans, tomato sauce, onion, oregano, garlic and pepper to the slow cooker and stir to combine.

2. Cover and cook on low, about 4 hours, until the chicken is cooked through.

3. Cook the Orzo pasta according to directions on package.

4. Serve over cooked orzo pasta and top each serving with the Feta Cheese.
