RHUBARB BREAD

A great recipe by one of the ER nurses. Moist and flavorful.

Ingredients

  • TOPPING:
  • 3-3/4 cup flour
  • 1-1/2 tsp. baking soda
  • 1 tsp salt
  • 2 cups rhubarb (1/2 inch pieces)
  • 1 cup walnuts
  • 1-1/2 cups packed brown sugar
  • 1-1/2 cup buttermilk
  • 1 cup vegetable oil
  • 2 tsp vanilla
  • 2 eggs
  • 1/2 cup granulated sugar
  • 1 TBSP butter melted
  • 1 tsp cinnamon

Preparation

Step 1

Mix flour, baking soda, salt, rhubarb and walnuts together.

Mix separately brown sugar, buttermilk, oil, vanilla and eggs.

Add both together. Pour into buttered pans.

Mix topping ingredients and put on top of batter before baking.

Bake in 350 degree oven for 55 minutes.
