Red Velvet Cake

Fluffy red velvet cake that's perfect for a romantic night in, or a Mother's Day treat.

Ingredients

  • CAKE:
  • 2 ounces red food coloring
  • 3 tablespoons Nestle cocoa
  • 1/2 cup Crisco
  • 1 1/2 cup sugar
  • 2 eggs
  • 2 1/4 cups cake flour
  • 1 teaspoon salt (scant)
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  • 1 tablespoon vinegar
  • 1 teaspoon baking soda
  • FROSTING:
  • 1 stick margarine
  • 1/2 cup Crisco
  • 1 cup sugar
  • 3 tablespoons flour
  • 2/3 cup canned milk (1 small size can) room temperature
  • 1 teaspoon vanilla

Preparation

Step 1

CAKE:
Mix food coloring with 2 or 3 tablespoons of Nestle Cocoa. Set this mixture aside.

Cream 1/2 cup Crisco and 1 1/2 cups sugar. Add 2 eggs and beat well, then add the coloring paste and mix well.

Sift 2 ¼ cups cake flour with scant 1 teaspoon salt. To egg mixture, add flour mixture alternately with 1 cup buttermilk starting and ending with flour. Add 1 teaspoon vanilla.

Remove from mixer and add 1 tablespoon vinegar and 1 teaspoon baking soda, MIX BY HAND.

Bake in 2 greased and floured 9 inch layer pans for 30 to 35 minutes at 350°F. Cool on rack for 10 minutes before removing from pans.

FROSTING:
Cream 1 stick oleo, ½ cup Crisco and 1 cup sugar.

Add 3 tablespoons flour, 1 spoon at a time and 2/3 cup canned milk at room temperature. Add 1 teaspoon vanilla and beat well.

Spread on cooled cake. Frosting looks like whipped cream.
