Noodle Rice Pilaf

Ingredients

  • 1/4 cup butter or margarine
  • 1 cup long grain rice
  • 1/2 cup uncooked fine egg noodles
  • 2 3/4 cups chicken broth
  • 2 tablespoons minced fresh parsley

Preparation

Step 1

0Break up noodles into small pieces, melt butter in heavy large sauce pan and stir in broken up noddles and stir until lightly brown, about 3 minutes.Stir in broth and bring to boil. Add rice and reduce heat and simmer until rice is tender and broth is absorbed, about 25 minutes. Stir in parsley and serve. Yields 4 servings.
