Salted Chocolate Truffles

Delicious truffles are healthy made with Medijool dates and unsweetened cocoa. Perfect little bit of sweetness any time of year!

Ingredients
- 12 Medjool dates, pitted
- 6 tablespoons hot water
- 1/2 cup raw walnuts
- 2 tablespoons chia seeds
- 4 tablespoons + 2 teaspoons unsweetened cocoa
- 1/2 teaspoon sea salt
Preparation
Step 1
Process dates and hot water in food processor until it is sticky and balls up. Add walnuts, chia seeds and 4 tablespoons of cocoa and pulse until a solid ball forms, about 10 times.
Using a cookie scoop, form dough into 16 balls (about 1-1/2"). Transfer to large plate and chill in fridge about 30-60 minutes. Place remaining 2 teaspoons of cocoa in bowl. Roll the balls in the cocoa until lightly coated; sprinkle with salt. Serve immediately or refrigerate up to 7 days.
