Orange You Glad I'm Chicken

Ingredients

  • 2 C Orange Juice
  • 5 T Orange Extract
  • 1 T Honey
  • 1/2 C EVOO
  • 1 t Salt
  • 1 Onion Chopped
  • 4 Skinless, boneless Chicken Breasts pounded to 1/2"
  • 1/2 C Heavy Cream
  • 3 T cornstarch
  • 4 T EVOO
  • 1/2 C Flour
  • 1 C Canned Mandarin Orange Segments drained

Preparation

Step 1

Combine the Orange Juice, 2 T orange extract, honey, oil, salt, onions and garlic ina bowl and mix well.

Pierce chicken breasts with a fork servarl times so marinade can penetrate the meat. PLace each breast in its own large ziploc bag. Pour orange juice marinade over each half to evenly coat. You will use all of the marinade

Place bags in a large bowl to catch any drips. Place bowl in fridge and allow to marinate for 4 hours.

Combine heavy cream, cornstarch and remaining orange extract in a small bowl.

Heat the 4 T EVOO in skillet over medium heat. Remove chicken from bags and lightly coat with flour. Place chicken in hot skillet and brown on both sides.

Stir in heavey cream mixture and orange segments. Simmer cream mixtrue until liquid has reduced by half. Remove chicken from pan when no longer pink in center and allow sauce to reduce another 3 minutes. Serve over rice.
