Southern Tomato Pie

Ingredients

  • 1 Refrigerated Pie Crust (or frozen)
  • 1 Cup Mayonnaise
  • 2 Cups Cheddar Cheese shredded
  • 1/4 Teaspoon Fresh Ground Black Pepper
  • 1/4 Cup Sliced Scallions
  • 1 1/3 pound ripe plum tomatoes, sliced (about 8-10 medium)

Preparation

Step 1

1. Preheat oven to 350 degrees. Place oven rack in bottom position.
2. Crimp pie crust edges and prick bottom and sides with fork.
3. Bake 10-12 minutes till puffy and dry.
4. Stir together mayonnaise, 1 1/4 Cup cheese and pepper.
5. Sprinkle crust with 1/2 cup cheese. Top with 1/4 of tomatoes. Sprinkle with 1 tablespoon scallions.
6. Dollop 1/3 cup mayonnaise mix over.
7. Continue to Layer.
8. Top with rest of cheese (1/4 cup).
9. Bake 30-35 minutes until crust is golden.
10. Cool on rack at least 10 minutes.
