Bacon, Onion & Potato Cake

Ingredients

  • 1 1/2 pounds potatoes, peeled and coarsely grated
  • 1 tbsp butter
  • 2 tbsp vegetable oil
  • 1 onion, chopped
  • 6 strips rindless bacon, cut into 1/2 in strips
  • 1 medium egg, beaten
  • 1 tbsp all-purpose flour
  • 2 tbsp chopped fresh parsley
  • black pepper

Preparation

Step 1

1. Place the grated potatoes in a clean tea towel and squeeze out any excess liquid. heat the butter and 1 tablespoon of the oil in a non-stick frying pan. Add the onion and bacon and cook for 5-8 minutes, until the onion has softened and the bacon is cooked through. Clean the pan.

2. Place the potatoes in a large bowl. Stir in the onion and bacon mixture with the egg, flour, parsley and pepper. Heat the remaining oil in the frying pan, add the potatoes mixture and press into a flat round with a wooden spoon. Cook over low heat for 10 minutes or until the base is golden.

3. Carefully slide the potato cake onto a large plate. Place another large plate over the top and flip the cake so that the uncooked side is underneath. heat the remaining oil in the pan, then carefully slide the cake back into the pan, uncooked-side down. Cook over low heat for 10 minutes or until the base is crisp and golden.
