Carrot Cake

Ingredients

  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • some salt
  • 1 1/2 cups oil
  • 4 eggs
  • 2 cups grated carrots (usually 1 pound)
  • 1 8 ounce package cream cheese
  • 1 stick butter
  • 1 box powdered sugar
  • 1 tablespoon vanilla
  • 1 cup chopped nuts

Preparation

Step 1

Sift first five ingredients together 3 times.

Add oil and beat slow for 10 minutes. Add and beat in eggs one at a time. Fold in grated carrots.

Bake in 2 9" pans for 25 - 30 minutes at 350*F. You can also bake in 1 large cake pan for 50 - 60 minutes.

Let cool before frosting

For Frosting: Soften and cream together cream cheese and butter. Add powdered sugar, vanilla, and chopped nuts to cream cheese and butter mixture. Mix well and frost cake.
