Cuban Black Bean Chili - Pork or Beef

Ingredients

  • 2 T EVOO
  • 2 lbs boneless pork loin chops, diced or lean ground beef
  • 2 c chopped onion
  • 1 c chopped green bell pepper (can add chopped jalapeños for more spice)
  • 3-4 cloves garlic, minced
  • 2 T ground cumin
  • 2 T chili powder
  • 1 T red wine vinegar
  • 2 t dried oregano
  • 2 t dried basil leaves
  • 1 T garlic powder
  • Juice of 3 limes or 6 T frozen
  • Red hot sauce to taste
  • 3 (15 oz) cans black beans, rinsed & drained
  • 2 (14.5 oz) diced tomatoes with green chilies
  • 1 Lg can (28-32 oz) crushed tomatoes
  • 1 can (14.5 oz) reduced sodium chicken broth

Preparation

Step 1

In Dutch oven, heat oil over med high heat. Add pork or beef; cook until browned about 8-10 min. Add onion, bell pepper, garlic, garlic powder, cumin, chili powder, oregano & basil; cook stirring often about 5 min.

Reserve 1 c black beans. Add remaining beans, tomatoes & broth to chili. Add red wine vinegar, lime juice & hot sauce; reduce heat & simmer stirring occasionally 20 min. In med bowl, mash reserved black beans; stir into chili. Cook until heated through about 5 min.
