ORANGE CRANBERRY-NUT BREAD

Ingredients

  • 2 C flour
  • 1 C sugar
  • 1 1/2 t baking powder
  • 1/2 t baking soda
  • 1 t salt
  • 1/3 C margarine
  • 2 t grated orange peel
  • 3/4 C orange juice
  • 1 egg, beaten
  • 1 1/4 C finely chopped cranberry
  • 3/4 C chopped walnuts

Preparation

Step 1

In large bowl mix dry ingredients
Cut in margarine
Combine the orange peel, juice, and egg and add to dry ingredients. Mix until just moistened, then fold in cranberries and nuts.
Bake in greased loaf pan at 350 degrees for 1 hour and 10 minutes. (Can also be baked in a muffin pan: Fill greased muffin tins 3/4 full and bake about 20 minutes)
