BANANA LEMON BREAD

Ingredients

  • 3 bananas, mashed
  • 1 lemon juice (about 2 tbsp.)
  • 1 tsp. lemon peel
  • 120 grams softened butter, at room temperature (1/2 cup)
  • 200 grams sugar (1 cup)
  • 60 grams of walnuts
  • 240 grams all purpose flour (1 1/4) or 1.0144 cups
  • 2 eggs, beaten
  • 2 tsp. baking powder
  • 1/2 tsp. salt

Preparation

Step 1

1. Preheat oven to 350 deg.
2. Mix together the butter and sugar in large bowl until light and fluffy.
3. Slowly add the beaten eggs one at a time
4. Stir in bananas and lemon juice
5. Mix together the flour, baking powder and salt in a separate bowl.
6. Add to creamed mixture and mix gently then add walnuts and lemon peel.
7. Pour into greased and parchment-lined pan.

Bake 50 minutes until done in center.
Cool 10 to 15 minutes before removing from pan.
