Ingredients
- 1 lb. broccoli cut in 1" pieces
- 1/3 c fresh onion, chopped
- 5 oz. butter
- 6 oz. flour
- 2-1/2 qt. chicken stock
- 6 oz. heavy cream
- 4 oz. parmesan cheese
- salt and pepper to taste
Preparation
Step 1
Cook broccoli and onions together with water until tender yet firm. Melt butter in pan. Add flour to make roux. Cook 5 minutes. Bleed in cream, stirring constantly to make smooth thick sauce. Add stock. Continue cooking and stirring to make desired consistency. Add cheese, broccoli and onions. Add seasonings to taste.
