Sliced Tomatoes with Corn and Feta

Ingredients

  • 3 c. fresh corn kernels
  • 2 c. baby arugula
  • 4 oz. feta crumbled
  • 2 tbsp. Chopped fresh oregano
  • 1/3 c. olive oil
  • 3 tbsp. red wine vinegar
  • Kosher salt
  • Freshly ground black pepper
  • 2 lb. tomatoes, sliced

Preparation

Step 1

Combine corn, arugula, feta, oregano, oil, and vinegar in a bowl. Season with salt and pepper.
Serve tomatoes topped with corn mixture.
