    c. baby arugula

    oz. feta crumbled

    tbsp. Chopped fresh oregano

  • c. olive oil

    tbsp. red wine vinegar

  • Kosher salt

  • Freshly ground black pepper

    lb. tomatoes, sliced

Directions

Combine corn, arugula, feta, oregano, oil, and vinegar in a bowl. Season with salt and pepper. Serve tomatoes topped with corn mixture.
