Lindsay's Lemon Nut Bread

In memory of Lindsay. She made this recipe when she was only 10 years old and it went to State Fair!

Ingredients

  • 4 Tb. margarine
  • 3/4 c. sugar
  • 2 eggs
  • 2 tsp. grated lemon peel
  • 2 c. flour
  • 2 1/2 baking powder
  • salt
  • 3/4 c. milk
  • 1/2 c. chopped walnuts
  • Topping: (optional)
  • 2 tsp. lemon juice
  • 2 Tb. sugar

Preparation

Step 1

Cream margarine & 3/4 c. sugar til fluffy. Add eggs and lemon peel. Stir in all the rest, except the Topping.
Pour into a greased loaf pan. Bake at 350 for 50 - 55 minutes. Let cool for 10 minutes and remove from pan to cool. Spoon topping over top if desired.
