Warm Spinach Salad

Ingredients

  • 2 2 2 tbsp olive oil
  • 4 4 4 slices bacon
  • 2 2 2 tbsp pine nuts
  • 2 2 2 small garlic cloves minced
  • 1 1 1 pound spinach leaves
  • 1 1 1 tbsp balsamic vinegar
  • 1 1 1 tbsp grated parmesan

Preparation

Step 1

Heat one tbsp of oil in heavy skillet over medium heat until hot but not smoking.
Add the bacon and saute stirring occasionally.
Add the pine nuts and cook for 1 minute, add the garlic and cook stirring for 30 sec.
Add the spinach vinegar and remaining oil, cook, tossing gently for 15 sec.
Transfer to plates and sprinkle with parmesan.
