Shrimp Toast

Ingredients

  • 12 slices white bread
  • 1 lb shrimp
  • 1/4 c finely chopped onion
  • 2 tsp salt
  • 1 tsp sugar
  • 1 tbsp. corn starch
  • 1 egg beaten
  • 1 can water chestnuts (5 1/4 oz) drained and finely chopped
  • oil
  • parsley

Preparation

Step 1

Trim bread. Let dry slightly

Chop shrimp in blender. In medium bowl, to shrimp with onion, salt, sugar, cornstarch. Mix well. Stir in beaten egg and water chestnuts. Mix well. Spread mixture o beac; cut each slice into quarters.

Heat about 1 inch oil to 375. Drop bread pieces, shrimp side down, in hot oil. Fry until edges begin to brown.

Drain well on paper towel. Sprinkle with chopped parsley. Serve warm.
