Bran Muffins

So quick and easy to make, these tasty bran muffins can be prepped and baked in under 30 minutes. Serve with a nice glass of milk and some fruit for a fast and healthy breakfast!

Ingredients

  • 3 cups bran
  • 1 cup boiling water
  • 1/2 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 pint buttermilk
  • 2 1/2 cups flour
  • 2 1/2 teaspoons baking soda
  • 1 cup raisins (optional)

Preparation

Step 1

Preheat oven to 375°. Grease muffin tins.

Mix bran, water, and oil, and set aside to cool. In a large bowl, mix sugar and eggs together. Add salt, buttermilk, flour, baking soda, and raisins.

Mix all together, add bran mixture, and stir. Spoon into muffin cups and bake for 20 minutes.
