Spiral Pasta Salad

Ingredients

  • Marjoram Vinaigrette:
  • 1 pkg (12 oz) spiral pasta
  • 3 plum tomatoes, seeded and chopped
  • 1 medium green pepper, chopped
  • 1 small onion, thinly sliced
  • 1 can (2 1/4 oz) sliced ripe olives, drained
  • 1 crown of broccoli (optional)
  • 3 tbsp white wine vinegar
  • 2 tbsp honey
  • 1 tbsp minced fresh marjoram (or 1 tsp dried marjoram)
  • 1 1/2 tsp minced fresh basil (or 1/2 tsp dried basil)
  • 1 tsp Dijon Mustard
  • 3/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup olive oil

Preparation

Step 1

Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the pasta, tomatoes, green pepper, onion and olives.

In a small bowl, combine the vinegar, honey, marjoram, basil, mustard, salt and pepper. Gradually whisk in oil. Pour over pasta mixture and toss to coat. Cover and refrigerate until serving.
