Ingredients
- Marjoram Vinaigrette:
- 1 pkg (12 oz) spiral pasta
- 3 plum tomatoes, seeded and chopped
- 1 medium green pepper, chopped
- 1 small onion, thinly sliced
- 1 can (2 1/4 oz) sliced ripe olives, drained
- 1 crown of broccoli (optional)
- 3 tbsp white wine vinegar
- 2 tbsp honey
- 1 tbsp minced fresh marjoram (or 1 tsp dried marjoram)
- 1 1/2 tsp minced fresh basil (or 1/2 tsp dried basil)
- 1 tsp Dijon Mustard
- 3/4 tsp salt
- 1/8 tsp pepper
- 1/2 cup olive oil
Preparation
Step 1
Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the pasta, tomatoes, green pepper, onion and olives.
In a small bowl, combine the vinegar, honey, marjoram, basil, mustard, salt and pepper. Gradually whisk in oil. Pour over pasta mixture and toss to coat. Cover and refrigerate until serving.
