Ingredients

  • 8 skinless, boneless chicken thighs
  • 57 g goat cheese cheese crumbs
  • 1/4 c sun dried tomatoes thinly sliced
  • 1/2 T chopped fresh thyme
  • 1 T olive oil

Preparation

Step 1

Lightly oil grill and preheat bq to medium-high
Place thighs, smooth side down, on cutting board. Divide cheese crumbs, is dried tomatoes and thyme between thighs.
Fold the 2 ends snugly toward the centre of each and secure with toothpicks. Lightly brush with oil and place on grill. Close lid and cook until chicken is firm and cooked through 20 to 25 mins., or until chicken reaches an internal temp of 170 F. Turn as needed to brown evenly on all sides. Se ason with salt and pepper.
