Ingredients
- 2 avocados sliced in half, seed removed
- 12 oz cooked shrimp/tails removed
- 1/4 cup chopped cilantro
- juice of 2 fresh limes
- 2 roma tomatoes, diced
- 1-2 garlic cloves, minced
- 1/2 Tbs good quality olive oil
- optional: black beans, brown rice, quinoa,
- diced peppers, diced red onion
- sea salt and pepper to taste
Preparation
Step 1
{Combine everything except avocado, in
a large
bowl. Scoop into avocado halves, evenly.
