FRESH SHRIMP STUFFED AVOCADOS

Ingredients

  • 2 avocados sliced in half, seed removed
  • 12 oz cooked shrimp/tails removed
  • 1/4 cup chopped cilantro
  • juice of 2 fresh limes
  • 2 roma tomatoes, diced
  • 1-2 garlic cloves, minced
  • 1/2 Tbs good quality olive oil
  • optional: black beans, brown rice, quinoa,
  • diced peppers, diced red onion
  • sea salt and pepper to taste

Preparation

Step 1

{Combine everything except avocado, in
a large
bowl. Scoop into avocado halves, evenly.
Serve immediately)
