Butternut Squash Soup

Ingredients

  • 2 cups onions, finely chopped
  • 1 (3 lb) butternut squash,peeled and cubed
  • 4 cups chicken broth
  • 1 1/2 cups apple sauce
  • 1 1/2 tsp salt
  • 1/4 tsp ground white pepper
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tap curry powder
  • 1/4 tsp ground coriander
  • 1/4 tsp cinammon

Preparation

Step 1

1. In large skillet or on brown setting of slow cooker, cook the onions til transparent. Add the onions, and all remaining ingredients into slow cooker.

2. Cook on low for 4-6 hrs or until squash is tender.

3. If desired, process soup in small batches in a food processor till smooth. Return to slow cooker and cook for 2 more hrs.
