Chili-Corn Mashed Potatos

This Weight Watchers recipe makes for an great Mexican food side dish.

Ingredients

  • 3/4 - 1 cup frozen whole kernel corn, thawed
  • 2 1/2 cups peeled and cubed baking potato
  • 3 Tbs fat free sour cream
  • 3 Tbs skim milk
  • 1 Tbs stick butter
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 1/8 tsp ground cumin

Preparation

Step 1

Cook corn according to package directions. Place potato in sauce pan, cover with water and bring to a boil. Cover, reduce heat & simmer until tender. Drain and return to pan. Beat with a mixer at medium speed for 1 minute. Add all other ingredients except corn and beat until smooth. Stir in corn.
