Ginger-infused Black Beans

Ingredients

  • 6oz bottle pickles ginger
  • 1 tsp olive oil
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 1/4 tsp salt
  • 2 15oz cans black beans, undrained

Preparation

Step 1

Drain ginger in colander over bowl, save 1/4 cup ginger juice, reserve ginger for another use. Heat oil in med saucepan over med heat. Add onion and saute 5 min, add garlic, saute 1 min, stir in beans and salt, bring to boil, reduce heat, simmer 15 min, stirring occasionally, stir in ginger juice...
