Ingredients
- 1 cup sugar
- 5 tbsp. cornstarch
- 1/4 tsp. salt
- 1 1/2 cups boiling water
- 3 egg yolks
- 1/4 cup lemon juice
- Grated rind of 1 lemon
- 1 tbsp. butter
- Egg whites for meringue
Preparation
Step 1
Combine sugar, cornstarch and salt. Stir in boiling water and cook until thickened. Cover and cook until no raw flavour remains. Stir in slightly beaten egg yolks. Stir and cook until yolks thicken (about 2 minutes).
Remove from heat, add lemon juice, rind and butter. Cool slightly (without stirring).
Beat egg whites, add 6 tbsp. sugar gradually. Pile on filling. Bake at 325 deg. until meringue is cooked.
