Zucchini Bread – Trish

Ingredients

  • 4 cups grated zucchini, drain off any excess moisture
  • 3 cups flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 ground nutmeg
  • 1 1/3 cups sugar
  • 2 eggs, beaten
  • 2 tsp vanilla
  • 1/2 tsp salt
  • 3/4 c margarine, melted
  • 1 cup (100 grams) chopped pecans or walnuts (I put half and half)
  • 1 cup (120 grams) dried cranberries or raisins

Preparation

Step 1

Whisk together flour, baking soda and spices in a large bowl. In a separate bowl, whisk together sugar, eggs, vanilla, salt. Stir in zucchini then melted butter. Add the dry ingredients to the wet ingredients. Fold in nuts and cranberries. Put into 2 – 5x9 greased loaf pans. Bake at 350º for 50 minutes. Cool in pan 10 minutes then turn out to finish cooling.
