Shrimp Avocado Pasta Salad

Ingredients

  • 1 (16 oz) pkg. uncooked penne pasta
  • 1/4 pd. cooked bacon, crumbled
  • 1 pd. cooked shrimp
  • 2 avocados - peeled and diced
  • 1 cup shredded Cheddar cheese
  • 1 cup mayonnaise
  • 1/4 cup lemon juice
  • 2 tomatoes, diced
  • 1 tsp. crushed red pepper
  • 4 cups shredded lettuce

Preparation

Step 1

Cook pasta, and allow to cool.
In a large bowl, gently toss together all ingredients except the lettuce. Serve over the lettuce.
