Buffalo Shrimp Sandwiches

Ingredients

  • 4 soft dinner rolls
  • romaine, finely chpd
  • 1-2 celery stalks, chpd
  • 1/3 c carrots, shredded
  • blue cheese dressing
  • 1/2 c blue cheese crumbles
  • 2 T butter
  • 1 lb med shrimp, peeled & deveined
  • 3 T. Frank's Red Hot Sauce

Preparation

Step 1

Broil rolls until lightly toasted. In med bowl, toss lettuce, carrots and celery with dressing. Divide among the 4 rolls.

Coat a large nonstick skillet with cooking spray on med-high heat. Add 1 T butter and shrimp, saute 2 minutes or until shrimp is almost cooked thru.

Add remaining 1 T butter and hot sauce and continue to cook stirring shrimp to coat. Spoon onto sandwiches, add blue cheese crumbles.
