Shrimp scampi

Ingredients

  • 1 lb pasta
  • 1 c. pasta water
  • 4 tblsp butter and 2 tblsp evoo
  • 1 large shallot
  • 5 cloves garlic
  • pinch red pepper flakes
  • 1/2 c. white wine
  • 1/2 c. lemon juice
  • 1 lb shrimp

Preparation

Step 1

Saute shallots in 2 tblsp butter and evoo. Add garlic and red pepper flakes and saute 3-4 minutes.
Season shrimp with salt and pepper.
Saute with shallots 3-4 minutes.
Remove shrimp from pan. Add wine, lemon juice and boil to reduce. Add 2 tblsp butter and dash of curry powder.
Return shrimp to pan with 1 c. pasta water. Enjoy.
