Ingredients
- 1/4 cup olive oil
- 2 Tbsp sugar
- 1 tsp finely shredded lemon peel
- 1 Tbsp lemon juice
- 1/4 tsp salt
- 3 large oranges peeled and sectioned
- 3 large pink grapefruit, peeled and sectioned
- 1 green onion sliced (about 2 Tbsp)
- 1 Tbsp snipped fresh mint
- 4 cups shredded romaine lettuce
Preparation
Step 1
Combine oil, sugar, lemon peel, lemon juice, and salt in a screw-top jar. Cover and shake well.
Place orange and grapefruit sections, onion, and mint in a medium bowl. Pour dressing over and toss gently. Cover and refrigerate 2 to 24 hours. (Can be refrigerated up to 3 days.)
To serve put romaine in a large salad bowl and top with fruit mixture and toss lightly. Or place lettuce on individual plates and put fruit mixture on top.
