Ingredients
- 2 1/4 cups flour
- 1 cup sugar
- 1 cup softened butter
- 1 egg
- 1 tsp. vanilla
- 1 10oz. jar raspberry preserves or other
Preparation
Step 1
Heat oven to 350 degrees. In large mixer bowl combine ingredients and beat at low speed until mixture is solid.
Reserve 1 1/2 cups and set aside.
Press remaining mixture on bottom of a greased 8 or 9 inch square baking pan. Spread preserves to within 1/2 inch of edge. Crumble reserved mixture over preserves.
Bake for 40 to 50 minutes or until lightly brown. Cool. Cut into bars and sprinkle with powdered sugar.
If desired, add a cup of chopped nuts to the mixture. Can be stored in the refrigerator for 5 days or freezer for up to one month.
