CAULIFLOWER CASSEROLE

  • 1 large head cauliflower
  • 2 cups sliced mushrooms
  • 1/3 cup finely chopped celery
  • 1/4 cup butter
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1/8 tsp dry mustard
  • 1 1/4 cups milk
  • 1 cup shredded Swiss cheese
  • 1/2 cup cornflake crumbs
  • 2 tbsp butter, melted

Preparation

Step 1

Break cauliflower into florets and cook until tender-crisp. Drain. Saute mushrooms and celery in 1/4 cup butter until tender. Blend in flour, salt and mustard. Gradually stir in milk and cook over medium heat, stirring constantly, until mixture comes to a boil. Add cheese and stir until melted. Put cauliflower into a buttered, 1 1/2 quart casserole dish. Pour sauce over top. Combine crumbs and melted butter. Sprinkle over casserole. Bake at 350F for 20-25 minutes.
