Key Lime Pie

Ingredients

  • 1 prepared Graham cracker crust
  • 4 egg yolks
  • 1 14oz can sweetened condensed milk
  • 1/2 cup lime juice
  • 2 tsp grated lime peel
  • Whipping Cream Garnish
  • 1/2 cup whipping cream
  • 2 tsp sugar
  • 1/4 tsp vanilla

Preparation

Step 1

Beat egg yolks until thick and turn light yellow. Don't over mix.
Turn mixer off and add milk.
Turn speed to low and mix in half the lime juice.
Once juice is incorporated, add the other half and the peel. Continue to mix until blended.
Pour into prepared pie shell and bake at 350 for 12 minutes to set yolks.

Beat whipping cream, sugar and vanilla. Top cooled pie with whipping cream mixture.
