ROASTED BUTTERNUT SQUASH

Nice winter side dish. Squash is difficult to cut.


Ingredients

  • 1 4 lb butternut squash, peeled, seeded and cubed
  • (1 inch cubes)
  • 2 tbs olive oil
  • 1 tsp ground cumin
  • 1 tsp kosher salt
  • 1/2 tsp ground allspice
  • 1/2 tsp ground coriander
  • 1/4 tsp black pepper

Preparation

Step 1

Preheat oven to 425. Toss squash in oil in large bowl. In small bowl mix cumin, salt, allspice, coriander and pepper. Toss squash w/spices. Spread in single layer on 2 baking sheets or large roasting pan and roast 40 min, turning every 10 min.
