Ingredients
- 1 4 lb butternut squash, peeled, seeded and cubed
- (1 inch cubes)
- 2 tbs olive oil
- 1 tsp ground cumin
- 1 tsp kosher salt
- 1/2 tsp ground allspice
- 1/2 tsp ground coriander
- 1/4 tsp black pepper
Preparation
Step 1
Preheat oven to 425. Toss squash in oil in large bowl. In small bowl mix cumin, salt, allspice, coriander and pepper. Toss squash w/spices. Spread in single layer on 2 baking sheets or large roasting pan and roast 40 min, turning every 10 min.
