Ingredients
- 3 15 oz. cans black beans
- 1 large sweet onion, chopped
- 1 12 oz. pkg meatless burger crumbles
- 2 tbs veg oil
- 4 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp pepper
- 1/4 tsp salt
- 14 oz veg broth
- 2 14 oz cans diced tomatoes (or 4 large chopped tomatoes)
- Toppings: sour cream, shredded cheese, lime wedges, sliced jalapenos, cilantro, corn chips
Preparation
Step 1
Drain 2 cans black beans; not 3rd can. Saute onion and burger crumbles in hot oil in large pot over med heat X 6 min. Stir in chili powder, cum, pepper, salt; saute 1 min. Stir in all beans, chicken broth, tomatoes. Bring to boil over med heat; cover, reduce heat to low and simmer X 10 min. Serve w/toppings.
