MESCLUN WITH LEMON VINAIGRETTE

Ingredients

  • 1/2 tsp finely grated lemon zest
  • 2 tbs fresh lemon juice
  • 1 tbs white wine vinegar
  • 2 tsp Dijon mustard
  • 3 tbs olive oil
  • salt/pepper
  • 1 lb mesclun

Preparation

Step 1


In large bowl, whisk together zest, juice, vinegar, mustard and oil until combined and thickened; season w/salt and pepper.

Add mesclun; toss to coat. Season again w/salt and pepper.

Optional: top w/grated Parmesan cheese
