Lemony Zucchini Bruschetta

Ingredients

  • 2 medium zucchini, thinly sliced lengthwise
  • juice from 1 lemon
  • salt and pepper
  • 4 slices crusty bread
  • olive oil
  • Parmesan cheese, shaved

Preparation

Step 1

In a medium bowl, toss together zucchini strips, lemon juice, salt and pepper. Cover with plastic and marinate at least 30 minutes at room temp.
Heat broiler. On baking sheet, place 4 slices crusty bread. Drizzle olive oil over each slice. Broil until browned around edges, 2 minutes. Divide zucchini among toasts, cut in half if desired. Top each with a few shavings parmesan and a drizzle of olive oil.
