SOUTHERN BANANA PUDDING

Do not use instant pudding; you are so lazy.

Ingredients

  • 1 pkg Jello Vanilla or Banana Cream Flavor Cook & Serve
  • Pudding and Pie Filling
  • 2 1/2 cups milk
  • 2 egg yolks, well beaten
  • 30 - vanilla wafers
  • 35 35
  • 2 large bananas, sliced
  • 2 egg whites
  • 1/4 cup sugar
  • Dash salt

Preparation

Step 1

Heat oven to 350.

Stir pudding mix into milk in med saucepan. Add egg yolks. Stirring constantly, cook on med heat until mixture comes to full boil. Remove from heat.
Arrange layer of cookies on bottom of 1 ½ qt baking dish. Add layer of banana slices; top w/1/3 of the pudding. Repeat layers twice, ending w/pudding.
Beat egg whites and salt in med bowl w/electric mixer on high speed until foamy. Gradually add sugar, beating until stiff peaks form. Spoon meringue mixture lightly onto pudding, spreading to edge of dish to seal.
