Cashew and Orange Salad

Ingredients

  • 1/2 cup unsalted cashews
  • 3 tablespoons brown sugar
  • 2 Tablespoons water
  • 1 head butter lettuce
  • 1/2 head romaine lettuce
  • 1 cup chopped celery
  • 2 green onion, chopped
  • 1 1/3 cups mandarin orange segments
  • RED WINE VINAIGRETTE DRESSING
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1/4 cup vegetable oil
  • 1 tablespoon chopped parsley
  • 2 tablespoons red wine vinegar
  • dash tabasco sauce

Preparation

Step 1

In small pan over medium heat cook cashews, brown sugar, and water, stirring constantly until cashews are coated and sugar is dissolved. Cool on waxed paper. Store in airtight container.

Combine lettuces, celery and onion.

Combine all dressing ingredients mixing well. Chill until serving time. Pour over salad. Add sugared nuts and oranges.
