Golden Beet Salad with Avocado & Feta

Ingredients

  • 3 med golden beets
  • 1 t grated lemon rind
  • 1 1/2 T lemon juice
  • Salt & pepper
  • 1 large thinly sliced shallot
  • 2 T olive oil
  • 4 C arugula
  • 1 sliced avocado
  • 1 oz. (@ 1/4 C) crumbled feta cheese

Preparation

Step 1

Cook beets in boiling water until tender, @ 20 min. When cool enough to handle, peel & slice into 1/2" wedges

Combine rind, juice, sat & pepper & shallot in small bowl, stirring with a whisk Let stand 10 min. Gradually add oil, stirring constantly. Place arugula in large bowl; add 2 T dressing; toss to coat. Add beets to remaining dressing; toss to coat. Top arugula with beets, avocado & feta
