Ingredients
- 4 large baked potatoes
- 1 pkg (10 oz.) spinach thawed/chopped
- 1/4 cup butter
- 1/4 cup cottage cheese
- 1/2 cup warm milk
- 2 cups cheddar cheese grated
- salt and pepper
- 1/8 tsp. cayenne pepper
Preparation
Step 1
cut each potato in half, and scoop out the potato leaving 1/4 inch all around.
mash the potatoes in a bowl with butter, milk and cottage cheese, add the spinach until well blended. stir in spices and cheddar.
spoon mixture into each potato shell, then bake for 30 minutes
