    large baked potatoes

  • 1

    pkg (10 oz.) spinach thawed/chopped

  • 1/4

    cup butter

  • 1/4

    cup cottage cheese

  • 1/2

    cup warm milk

  • 2

    cups cheddar cheese grated

  • salt and pepper

  • 1/8

    tsp. cayenne pepper

Directions

cut each potato in half, and scoop out the potato leaving 1/4 inch all around. mash the potatoes in a bowl with butter, milk and cottage cheese, add the spinach until well blended. stir in spices and cheddar. spoon mixture into each potato shell, then bake for 30 minutes
