Ingredients

  • Cake:
  • 1 lemon cake mix
  • 1 small box instant lemon pudding
  • 1/3 cup oil
  • 4 eggs
  • 1 cup water
  • Glaze:
  • 1 box powdered sugar
  • zest of 1 lemon
  • 3 tablespoons water
  • 3 tablespoons oil 1/3 cup lemon juice

Preparation

Step 1

Cake:
Mix cake ingredients together. Spray mini muffin tins. fill 1/2 full.
Bake at 350 for 10 to 12 minutes. Cool completely .

Glaze:
Mix all ingredients together until smooth. Dip each muffin with a slotted spoon in the glaze. Let excess drain off . Set on wax paper to dry. Can be frozen when done.
